When bottled during the first week of July’08, this wine immediately
showed a strong freshly cut grass character. When poured, the flintiness
and bold white asparagus flavors came strongly to the fore ground.
Expect the wine to show green fig, fig leave and those very typical
Cederberg minerality aromas the longer it’s kept in the bottle.
This Sauv, harvested since 1989 on the farm, by now shows it’s
true South African colors in a blind tasting. Serve it as a palate
cleanser or appetizer before a meal, but let it hang around for
a great, preferably, green salad or salmon or herby potato dish.

For
14 years our south-facing Sauvignon Blanc vineyards were keeping
their secret, but the 2004 harvest, with a acid of 7,4 and 1,9 grams
of sugar per liter, is definitely hinting at what Cederberg Sauvignon
Blanc is all about: a unique South African wine with very definite
nose and palate characteristics.
An
elegant and exciting crisp wine with highly concentrated gooseberry
and fig leaf aromas, as well as some dusty/peppery whiffs. The crisp
taste adds freshness to any seafood dish, especially oysters and
salmon.
