Teen die Hoog Shiraz 2015

‘Teen die Hoog’ shiraz vineyards are located more than 1000m above sea level. This is the highest vineyard in the Western Cape situated on a cool south easterly facing red slate slope. The name was given by the farm workers as it reminds them of the toughest pick of the season. The Cederberg climate allows for a long ripening period providing us with grapes picked at great phenolic ripeness. This shiraz is a clear expression of the cool Cederberg mountains showing great fruit intensity of mulberries and blackberries with a combination of sweet spice and violets on the nose. A firm structure on the palate and a long lingering aftertaste of dark berries and spices makes this an excellent wine to cellar for a further 5 - 8 years. An exclusive wine of less than 1000 bottles.

Degree balling at harvest: Early morning hand harvested at 25 - 26°B
Vinification: Vinification: 15% juice bleeding directly after crush, cold maceration for 3 days. Inoculate with Rhône yeast strain, a combination of pump overs and punch downs every 6 hours during peak fermentation. Ferments at 25-28° C for 5 days . 14 days of extended skin maceration. Malolactic fermentation in new French oak barrel. Barrel maturation: 225L tight grain 100% new French oak, medium toast, a maturation for 15 months. Only 3 barrels selected.
