Shiraz 2016

A medium bodied Shiraz filled with red cherries and a hint of white pepper spice. Well integrated oak with a juicy lingering finish on the palate. Pair with South African game, cheeses such as a young cheddar or gruyere or indulge by pairing with a rich and creamy curry.

Vinification: Vinification: cold maceration for 2 days, inoculate with selected yeast strain. Pump overs every 6 hours during fermentation. Ferments at at 25-28 degrees Celsius for 5 days. Malolactic fermentation in French oak barrels. Barrel maturation: 30% 3rd fill , 30% 4th fill, medium toast tight grain 225L French oak barrels, 15 months in oak.
Optimum drinking time: 3 - 5 years
