We asked Thinus, one of our winemaker’s, a few interesting questions and here is what he had to say…
When did you first become interested in becoming a winemaker?
The moment that made me want to become a winemaker was when I realised that all my interests merged around wine, the combination of nature, people, process and purpose and, of course, the company of like-minded people. My interest still grows daily as the world of wine opens its experiences and opportunities.
What is your most memorable wine or wine-tasting experience?
One memory that will always stand out for me was sitting around a small table on Marmakas Beach in Ithaka with my father, enjoying a glass of local wine. The wine was not off the top shelves, but the memory and day were.
What do you enjoy best about being an assistant winemaker at Cederberg Wines?
What’s there not to love? Waking up in a world heritage site surrounded by fynbos, mountains, vineyards, and crystal-clear night skies is an extraordinary feeling, and once you taste the wine, it all makes sense.
What are the fundamentals of your winemaking approach?
Sharing the connection between the place and what you experience in the glass, naturally, there are many moving parts along the way, each with its own set of principles, precision, and challenges, but that keeps it exciting.
What are your personal winemaking goals?
To be fortunate enough to be a part of this unique process for as long as possible.
What is your favourite food and wine pairing?
Something I can have often, probably a three cheese (Cheddar, Gruyere and Emmental) braaibroodjie with a glass of cold Cederberg Chenin Blanc, locally lavish.
